Cheese Curds - Buffalo - 8 oz


Trinity Valley Dairy is a fourth generation family farm located in upstate New York, about 30 minutes from Syracuse bottling their own milk and making their cheese curds right on the farm. They do not use any artificial growth hormones. Their milk is processed using a low temperature pasteurization system. 

Cheese curds can best be described as "baby cheese". The milk comes straight from the cow and goes into a vat where a coagulant is added that thickens the milk. Once the milk is thickened to a "pudding consistency" knives are pulled through the vat cutting the "milk pudding" into curds. The curds are then heated to 103 degrees and gently stirred, which causes the whey (a watery liquid) to separate from the curds. The whey is then drained from the vat so that all that remains are the delicious curds!

Ingredients: pasteurized milk, salt, enzymes and cultures, spices including paprika, salt, vinegar powder (maltodextrin, distilled white vinegar, modified cornstarch), modified cornstarch, tomato powder, dextrose, onion powder, garlic powder, spice extractives including oleoresin paprika, soybean oil (processing aid), with no more than 2% tricalcium phosphates as anti-caking agent
