Herbs - Parsley - Italian Flat Leaf - 1 bunch
| • Place the stems in a glass of water and cover the the top loosely with a plastic bag. Refrigerate. Snip off leaves as you need them and re-cover.
• The water should be changed every 2 to 3 days. Do not wash the herb until you are ready to use it since excess moisture will turn the leaves to green slime during storage.
• Parsley should last up to a week in the refrigerator.
|Used to perk up dishes with its fresh green flavor and color, parsley can be much more than a garnish. The two main cultivars of this herb are curly parsley, with ruffled leaves and Italian parsley, with flat leaves.
In general, flat-leaf parsley has a more robust flavor, while the curly variety is associated with decoration. Both kinds of parsley may be used in cooking and when substituting one for the other, taste to determine the flavor and adjust as desired.
Finally, don't discard the stems, which have a stronger flavor than the leaves and can be added to homemade stock or a pot of beans.
